Shrimp Gumbo

Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound Italian hot sausage, casings removed
  • 1 large onion, chopped
  • 1 large sweet pepper, chopped
  • 2 rib celery, thinly sliced
  • 3 clove garlic, chopped
  • 2 14 1/2 ounce cans stewed tomatoes
  • 1 14 1/2 ounce can chicken broth
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne
  • 1 pound medium shrimp, shelled
  • 1 cup quick-cook rice
  • 1/4 cup chopped parsley

Make It

1. Heat oil in large saucepan over medium-high heat. Add sausage, onion, sweet pepper and celery; cook 8 minutes, breaking up sausage with wooden spoon.

2. Add garlic, tomatoes, broth, salt, paprika, black pepper and cayenne. Simmer, covered, 10 minutes.

3. Add shrimp; cook, covered, 4 minutes, until shrimp are pink and cooked through.

4. Remove from heat. Stir in rice. Cover; let stand 5 minutes. Serve hot, garnished with parsley. Makes 6 servings.
