Mostly Bean Chili

Mostly Bean Chili

Ingredients

  • 1/4 pound ground beef
  • 1 large onion, chopped
  • 1 large sweet green pepper, cored, seeded and chopped
  • 2 cloves garlic, pressed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 can (28 ounces) tomatoes, packed in puree
  • 1 teaspoon salt
  • 2 cans (16 ounces each) red kidney beans, drained, rinsed

Make It

1. Saute beef, onion, green pepper and garlic in large pot over medium-high heat 4 to 5 minutes until vegetables are softened and meat is no longer pink. Stir in chili powder and cumin; saute 1 minute. Add tomatoes, breaking up with wooden spoon. Add salt. Bring to boiling. Lower heat; simmer, partially covered, 15 minutes.

2. Stir in beans. Simmer, stirring, until heated through. Makes 8 servings.
