Curry Lentil Soup

Ingredients

  • 2 teaspoons vegetable oil
  • 1 onion, chopped
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1 red bell pepper, diced
  • 1 garlic clove, minced
  • 4 cups water
  • 1 cup red or yellow lentils
  • 1 teaspoon salt

Make It

1. In large saucepan, heat oil over medium-high heat. Stir in onion, curry powder, and cumin, and cook 4 minutes. Stir in red pepper and garlic, and cook 3 minutes more.

2. Stir in water, lentils, and salt. Bring to a boil. Reduce heat; simmer until lentils are soft, about 15 minutes.
