Ingredients

  • 2 tablespoons oil
  • 1 box (16 ounces) converted rice
  • 6 cups chicken broth
  • 1 cup diced celery
  • 1 cup diced sweet green pepper
  • 1 onion, diced
  • 1/2 cup light soy sauce
  • 3 eggs, scrambled
  • 1 box (10 ounces) frozen peas, defrosted
  • 2 green onions, sliced

Make It

1. Heat the oil in a large pot over medium heat. Add the rice and cook, stirring, until golden brown, about 8 to 10 minutes. Add broth, celery, pepper, onion and soy, then cook over medium heat until the rice soaks up liquid. Stir in the scrambled eggs, peas and place in a serving dish. Garnish with the green onions.
