Preheat oven to 350°F. Line a large rimmed baking sheet with parchment paper. Pop open the can of cinnamon rolls and separate them; reserve icing. Working with one at a time, unravel each roll and fold one end 1/2-inch under. Transfer to prepared baking sheet. Shape and twist to form a snake, lightly pinching the folded end to create the head.
Bake until golden brown and cooked through, 15 to 18 minutes. Remove from oven and let cool 10 minutes.
Tint the icing green and warm a few seconds in the microwave. Using dabs of green icing, attach 2 pomegranate arils to each snake head to make eyes. Cut 1-inch lengths of the fruit leather; cut a slit at one end to make a forked tongue. Use a paring knife to cut a small slit in each head to form a mouth, and insert the fruit-leather tongues. Drizzle snakes with the green icing.
