1. Combine 8 cored and quartered pears, 1 1-inch piece ginger (peeled and sliced), 2 cinnamon sticks, 10 whole cloves, 10 whole allspice berries, 4 cups apple cider, and 1/2 cup dark brown sugar in a 6-qt. slow cooker and cook on high for 4 hours or until the pears are very soft. Turn off heat. Remove lid from slow cooker and allow mixture to cool for 30 minutes for easier handling. Carefully mash pears with a potato masher, then strain mixture through several layers of cheese cloth lining a colander or a fine mesh sieve, pressing to remove juice. Add water to reach 8 cups, if necessary. Return cider to slow cooker to keep warm.
- Prepare cider up to 2 days in advance. Refrigerate. To reheat, place cider in slow cooker and heat for 1 hour on high; reduce heat to low to keep cider warm.
