Make It

1. Season 6 skinless, boneless chicken thighs with 1/2 tsp. salt and 1/4 tsp. pepper. Place chicken in bottom of a 4-qt. slow cooker. Add one 28-oz. can crushed tomatoes, 1 thinly sliced sweet red pepper, 1 sliced green pepper, 1 sliced medium onion, 2 smashed garlic cloves, 1 bay leaf, 2 tsp. dried oregano, and 1/8 tsp. crushed red pepper. Cover and cook on low for 5 hours or high for 21/2 hours. Serve over pasta and garnish with 1 Tbs. chopped fresh parsley and basil.
