Heat the oven to 350° and line a baking sheet with parchment paper. Coat bamboo skewers with canola oil or cooking spray. Unroll refrigerator breadstick dough and cut it along the premarked lines. Roll each portion into a 10-inch-long rope, then wind it around a skewer, leaving 1/4 inch between each turn. Snip a mouth in one end, then slide in a pepper tongue. Press on olive eyes. Brush the dough with egg white, then add pepperoni triangles or poppy seeds. Bake the snakes until golden brown, about 18 minutes. Let them cool before removing the skewers.
