  • Heat oven to 425°F. Place tots, breakfast sausages, sweet pepper, and onion on a rimmed baking sheet and toss with olive oil. Spread evenly and bake until potatoes and sausage are starting to brown and the vegetables are soft, about 25 minutes. Stir mixture and then make 4 spaces on the pan and crack 1 egg into each space. Return to oven until egg whites are just set 5 to 7 minutes. Top with freshly ground black pepper.
