Ingredients

  • 6 ounces surimi, chopped
  • 2 ribs celery, chopped
  • 3 tablespoons chopped red onion
  • 1/4 cup mayonnaise
  • 1/2 teaspoon Dijon-style mustard
  • 5 drops hot-red pepper sauce
  • 1/8 teaspoon black pepper
  • 4 English muffins
  • 4 slices fresh tomato
  • 4 ounces shredded cheddar cheese

Make It

1. Combine in bowl surimi, celery, red onion, mayonnaise, mustard, hot red-pepper sauce and pepper.

2. Toast English muffins. Spoon surimi mixture over each. Lay slice of tomato on each. Sprinkle each with 1 ounce cheese. Run under broiler until cheese melts. Makes 4 servings.
