Ingredients

  • 3 strips bacon, chopped
  • 2 cloves garlic, finely chopped
  • 1 pound small bay scallops
  • 1/4 pound medium shrimp, shelled and cleaned
  • 1 can (11.8 ounces) coconut water
  • 1/4 cup water
  • 2 teaspoons chicken bouillon granules
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1 bag (16 ounces) frozen mixed peppers, thawed
  • 2 cups instant rice

Make It

1. Cook bacon in large nonstick skillet over medium heat, 4 minutes. Add garlic, scallops and shrimp; cook over medium-high heat, 4 minutes. Add coconut water, water, chicken bouillon granules, salt and red-pepper flakes. Bring to boiling. Add frozen mixed peppers; simmer 3 minutes. Stir in instant rice; cover and remove from heat. Let stand, stirring occasionally, 5 minutes or until liquid is absorbed. Makes 6 servings.
