Heat the oven to 375 degrees F. Coat 11 x 7 x 2-inch baking dish with cooking spray. Flake the salmon into the prepared dish.
Whisk sauce mix and milk in saucepan. Add onions. Simmer 5 minutes. Stir in peas and carrots; return to simmer. Spoon over salmon.
Prepare corn-bread mix according to package directions. Spoon around outer edge of baking dish.
Bake in 375 degree F oven for 25 minutes or until heated through. Makes 6 servings.
