Salmon & Arugula Roll-ups
Yield: 28 slices Prep 10 mins Chill 4 hrs or overnight

Ingredients

  • 2 plain round Lavash flatbread wraps (about 11-inch diameter)
  • 1 8 ounce container spreadable chive-and-onion-flavored cream cheese
  • 6 ounces thinly sliced smoked salmon
  • 1 small bunch arugula, trimmed, rinsed well and dried
  • 1 bunch fresh chives, for garnish (optional)

Make It

1. Place 1 wrap on flat work surface. Brush both sides lightly with a little water. Spread half of the flavored cream cheese on one side to within 1/2 inch of edge. Place half of the salmon over cream cheese. Arrange half of arugula over salmon. Roll up tightly. Wrap in dampened paper towel; wrap tightly in plastic wrap. Repeat with remaining ingredients. Refrigerate at least 4 hours or overnight.

2. To serve, remove wrappings from rolls. With serrated knife, diagonally cut rolls into 1/2-inch-thick slices. Arrange on platter. Garnish with chives, if you wish. Makes about 28 slices.
