  • 1 6 ounce package seasoned risotto-style rice mix
  • 6 (2 pounds) flounder fillets
  • 1/4 teaspoon salt
  • 1 package (.9 ounce) hollandaise sauce mix

Make It

1. Prepare rice mix following package directions; reserve 1 teaspoon seasoning mix. Sprinkle fillets with salt. Spoon cooked risotto onto center of each fillet; roll up each fillet around mixture. Place in buttered 13 x 9 x 2-inch baking dish. Bake in 400 degree F oven 15 minutes or until fish begins to flake when tested with fork. Prepare hollandaise sauce mix following package directions, adding reserved rice seasoning mix along with milk. To serve, spoon sauce over flounder rolls. Serve any remaining sauce on side. Makes 6 servings.
