Gary Willis's Fried Fish

  • 1/2 cup fine white cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon grated lemon peel
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 2 pounds whiting fillets
  • 1 cup peanut oil

Make It

1. Combine cornmeal, flour, salt, lemon peel, garlic powder, cayenne pepper and black pepper in large bowl. Dredge fish fillets in cornmeal mixture to coat all sides.

2. Heat oil in heavy, deep skillet or deep-fat fryer until oil registers 375 degrees F. Add a few fish fillets to hot oil, without crowding pan; brown on both sides, 5 or 6 minutes. Remove fish with slotted spoon to paper toweling to drain. Repeat to cook all fish.
