Baked Fish in White Wine

Ingredients

  • Fish:
  • 1/3 cup dry white wine
  • 3 tablespoons capers packed in oil, drained and chopped
  • 3 tablespoons chopped fresh mint
  • 2 large ripe tomatoes, seeded and chopped
  • 4 (about 1 to 1-1/4 pounds) flounder or sole fillets
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices lemon
  • 2 tablespoons unsalted butter
  • Couscous:
  • 1 1/2 cups water
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 1/2 cups plain couscous

Make It

1. Heat oven to 450 degrees F. Coat a baking pan just large enough to hold the fish with nonstick cooking spray.

Fish:

2. In medium-size bowl, gently stir together white wine, capers, mint and tomatoes.

3. Season fish with salt and pepper. Place in prepared baking dish. Pour tomato mixture over fish. Place a lemon slice on each fillet.

4. Bake in 450 degree F oven until fish is cooked through and flakes easily, 17 to 18 minutes. Remove fish to warm dish. Whisk butter into pan juices.

Couscous:

5. While fish is cooking, prepare couscous following package directions, using the butter, salt and pepper.

6. To serve, divide couscous among 4 plates. Spoon sauce from pan over couscous and serve with fish.
