Sausage-and-Cheese Bites

  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 teaspoons baking powder
  • 2 cups grated cheddar cheese
  • 1 pound mild Italian sausage, casing removed
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup milk

Make It

1. To make a batch of about 30 balls, whisk flour, salt, pepper, cayenne pepper, and baking powder. Add cheddar cheese and toss to coat. Add sausage, breaking it up with a fork. Add butter and milk and mix well. Using a tablespoon or a small scoop, shape the mixture into balls and place them on a cookie sheet. Bake in a 400 degrees oven until the balls are golden, about 25 minutes.


  • Serve them with pepper jelly for dipping-and make a lot. Nobody eats just one!
