  • Combine pineapple, apricots, juice, water and ginger in saucepan; heat to boiling. Reduce heat to medium; simmer, uncovered, 15 minutes or until liquid reduced by half. Puree in food processor or blender. Cover and chill at least 2 hours. Use within 2 weeks. Makes 2 cups.
