Very Veggie Slaw

Thinly sliced radishes with their nippy flavor give extra bite to this creamy coleslaw.

Ingredients

  • 3/4 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 tablespoon sugar
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups firmly packed finely shredded cabbage (about 1/2 small head)
  • 1 small sweet red pepper, cored seeded and thinly sliced
  • 1 small sweet green pepper, cored, seeded and thinly sliced
  • 8 radishes, timmed and thinly sliced

Make It

1. Stir together mayonnaise, vinegar, sugar, garlic, salt and pepper in large bowl. Add cabbage, red and green sweet peppers and radishes; toss to coat ingredients evenly with mayonnaise dressing.

2. Cover and refrigerate for at least 30 minutes or up to 24 hours. Makes 8 servings.
