Tomato Bruschetta

Tomato Bruschetta
Yield: 2 cups


  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon red-wine or balsamic vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3 large red tomatoes, cored and diced
  • 1 large yellow tomato, cored and diced
  • 1/4 cup thinly sliced fresh basil leaves
  • 12 slices French bread, grilled or toasted

Make It

1. In small bowl, combine olive oil and garlic. Microwave on high 30 seconds. Reserve 1 tablespoon garlic oil for grilled bread. Stir the vinegar, salt, and pepper into remaining garlic oil to make dressing.

2. In large bowl, gently stir together tomato pieces, basil, and dressing.

3. Brush bread slices with reserved oil, and serve with tomato mixture.
