Ingredients

  • 1 cup orange juice
  • 2 tablespoons creamy peanut butter
  • 1 clove garlic, finely chopped
  • 1 tablespoon rice-wine vinegar
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon grated orange rind
  • 1 green onion, finely chopped
  • 1 tablespoon chopped fresh mint
  • 1/8 teaspoon red-pepper flakes
  • 1 teaspoon reduced-sodium soy sauce
  • 1 teaspoon honey
  • 1 tablespoon dark sesame oil
Salad:
  • Salad:
  • 1 pound large shrimp
  • 2 cups shredded spinach leaves
  • 4 cups cooked white rice, at room temperature
  • 2 oranges, peeled, sectioned, seeded and chopped
  • 1 small sweet red pepper, diced
  • Salt, to taste
  • Mint sprigs and sesame seeds

Make It

Prepare dressing:

1. Puree orange juice, peanut butter, garlic, vinegar, ginger, orange rind, green onion, mint, red-pepper flakes, soy sauce, honey and sesame oil in blender. Whirl until smooth.

Prepare salad:

2. Combine shrimp, spinach, rice, orange and red pepper in bowl. Add dressing and salt. Garnish with mint and sesame seeds. Makes 4 servings.
