The lime dressing spiced with cumin and ginger perks up the sweet mellow taste of the carrots in this side-dish salad.
1. Place carrots in medium-size bowl.
2. Whisk oil, lime juice, cumin, ginger, salt and pepper in small bowl. Add to carrots; toss to coat. Cover and refrigerate 2 hours or overnight.
3. Mound carrot salad over spinach leaves on serving platter. Makes 6 servings.
