Italian Tomato Salad

Ingredients

  • 2 pounds ripe tomatoes, cored and diced
  • 1 Italian sweet frying pepper, seeded and thinly sliced
  • 3 cloves garlic, sliced
  • 1/4 cup extra-virgin olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red-pepper flakes

Make It

1. Mix together all ingredients in a large bowl. Cover and refrigerate 1 hour or overnight. Makes 8 servings.
