Homemade Caesar Salad

Ingredients

Dressing:
  • 1 cup low-fat cottage cheese
  • 2 tablespoons buttermilk
  • 2 teaspoons Champagne vinegar OR: white-wine vinegar
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon finely chopped garlic
  • 1 canned anchovy, rinsed in warm water to remove excess oil
  • 1 ounce Parmesan cheese, grated (about 1/3 cup)
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
Salad:
  • 12 cups cut-up romaine lettuce, (about 2 medium-size heads)
  • 2 teaspoons grated Parmesan cheese
  • 1/4 cup sliced green onions

Make It

Prepare dressing:

1. Combine cottage cheese, buttermilk, vinegar, lemon juice, garlic, anchovy, Parmesan, mustard, salt and pepper in blender or food processor. Process until smooth. Refrigerate to chill.

Prepare salad:

2. Toss together lettuce, 3/4 cup dressing and cheese in large bowl. Divide evenly among 6 salad plates. Garnish with sliced green onion. Reserve remaining dressing for other salads.
