Field Greens with Blue Cheese

  • 2 pounds mesclun (field greens); see Note
  • 6 ounces blue cheese
  • 1 tablespoon Dijon-style mustard
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 1/4 cup walnuts, toasted

Make It

1. Place greens in large serving bowl. Crumble blue cheese over top; toss.

2. Whisk mustard, honey and salt in small bowl. Whisk in vinegar, then oil. Add to greens; toss. Sprinkle with nuts.


3. Mesclun is a special mixture of baby greens found at farmers markets and many supermarkets. You may substitute your own selection of greens.
