Endive Salad with Tomato Vinaigrette

Ingredients

  • 2 tablespoons cider vinegar
  • 1 1/2 tablespoons Dijon-style mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup olive oil
  • 1/4 cup diced tomato
  • 1 green onion, finely chopped
  • 1 1/4 pounds Belgian endive (about 4)
  • 2 bunches watercress, stemmed

Make It

1. Combine vinegar, mustard, salt and pepper in bowl. Whisk in oil until blended. Stir in tomato and onion.

2. Halve endive lengthwise; remove core. Cut lengthwise in matchstick-thin strips. Combine endive and watercress in bowl. Just before serving, toss with tomato dressing.

  • Try this cool dressing on other greens, too.
