- 1 tablespoon Dijon mustard
- 1/4 cup red-wine vinegar
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup extra-virgin olive oil
1. Whisk mustard, vinegar, salt and pepper in small bowl to dissolve salt. While whisking, slowly drizzle in olive oil and continue to whisk until mixture is well blended and thick. Cover; refrigerate until ready to use. Let dressing come to room temperature; re-whisk before using. Serve with salad greens.
