Straight-from-the-garden cucumbers and cherry tomatoes are delicious as is. This simple salad recipe accents their garden freshness with a lemon and mint dressing.
1. Peel cucumbers; cut in half lengthwise; scoop out seeds and discard. Cut crosswise into 1/2-inch-thick pieces.
2. Toss together cucumber, tomatoes, olive oil, lemon juice, mint, salt and pepper flakes.
3. Cover and let stand for 1/2 hour or up to 4 hours before serving.
