- 1 large head cauliflower, chopped or shredded
- 1 1/2 cups salted peanuts
- 1 7 ounce package dried cranberries
- 2/3 cup light mayonnaise
- 1/3 cup sugar
1. In a large bowl, add the cauliflower, peanuts, cranberries, mayonnaise and sugar. Stir until well combined. Cover and refrigerate for at least 1 hour.
