Caesar Salad Dressing
Yield: 1-1/4 cups

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup canola oil
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons lemon juice
  • 2 tablespoons white vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons reduced-fat mayonnaise
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon ground white pepper
  • 5 teaspoons anchovy paste, if desired

Make It

1. In a food processor or blender, combine all ingredients, and, if desired, anchovy paste for around 30 seconds. Store in the refrigerator for up to a week.
