Apple & Kielbasa Salad

Ingredients

  • 2 tablespoons cider vinegar
  • 1 tablespoon grainy mustard
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 3 tablespoons olive oil
  • 3/4 pound turkey kielbasa
  • 1 10 ounce package shredded red cabbage
  • 3 Granny Smith apples, cored and grated
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon caraway seeds

Make It

1. In small bowl, mix together cider vinegar, grainy mustard, sugar, pepper and salt. Whisk in olive oil until blended. Set aside.

2. Coat a large nonstick skillet with nonstick cooking spray. Heat over medium-high heat and then add sliced turkey kielbasa. Cook 4 minutes, turning, until browned. Remove to a plate. Add shredded red cabbage, grated apples, cider vinegar and caraway seeds. Cook 4 minutes. Remove from heat; stir in kielbasa and dressing.
