1. In a heavy-bottomed saucepan, combine 4 cups milk, 1 cup long-grain rice, 2/3 cup sugar and 1/4 tsp salt. Bring to a boil; cover and simmer on low, stirring occasionally, 20 minutes. Add 3/4 cup dried cherries; simmer 20 minutes or until rice is tender. Stir in 1/2 tsp vanilla extract; sprinkle with cinnamon. Serves 6.
