Raspberry Chia Refrigerator Jam

  • 3 cups raspberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 cup chia seeds

Make It

1. In a pot, combine raspberries, sugar and lemon juice over medium heat; cook 5 minutes. Reduce heat to medium-low. Stir in chia seeds and cook until thickened, about 15 minutes.

2. Cool slightly and transfer to a canning jar (makes approximately 12 oz). Refrigerate until using. Jam will keep for about a week.
