1. In glass pie plate, lightly beat eggs, milk, sugar, vanilla, nutmeg and salt until foamy.
2. Heat a large nonstick skillet over medium-high heat. Coat with nonstick cooking spray.
3. Dip both sides of a slice of bread in egg mixture and shake off excess, letting it drip back into the plate. Place in skillet and quickly repeat with 2 more slices of bread. Cook for 2 minutes per side. Remove to a plate. Wipe out skillet and repeat with remaining bread and egg mixture. Serve with turkey sausage patties, if desired.
