  • 8 ounces goat cheese, at room temperature
  • 2 tablespoons olive oil
  • 2 tablespoons minced chives, plus more for topping
  • Salt and freshly ground pepper
  • 8 large seeded flatbread crackers (such as JJ Flats)
  • 8 slices prosciutto, halved lengthwise
  • 2 peaches, each pitted and cut into 8 wedges

Make It

1. Combine the goat cheese, olive oil and chives in a small bowl and mix well. Season to taste with salt and pepper.

2. Spread the seasoned goat cheese on the crackers. Wrap the prosciutto slices around the peach wedges and arrange on top of the goat cheese. Sprinkle with more chives.
