In medium-size saucepan, bring water and curry powder to a boil. Stir in the couscous and salt. Cover the saucepan; remove the pan from heat. Let stand 5 minutes or until water is absorbed by the couscous.
Stir chutney into couscous.
To serve, arrange couscous, turkey strips, scallions, tomatoes and melon in separate rows on 4 individual plates. Arrange shredded lettuce on one side of each plate. Garnish with lime wedges. Makes 4 servings.
