1. Position oven rack in top third of oven. Heat oven to 350 degrees F. Coat roasting pan with 1 tablespoon oil.
2. Rub remaining oil over turkey, then rub with lemon juice. Mix thyme, paprika, salt, sage and pepper in bowl. Rub over turkey. Sprinkle rind over skin side of turkey. Place turkey, skin side up, in pan.
3. Roast in top third of 350 degree F oven for 1 hour or until instant-read meat thermometer inserted in thickest part registers 170 degrees F.
4. Slice one breast half for meal. Cool other half; cover; refrigerate for Turkey Pizzaiola (www.familycircle.com). Makes 6 servings.
