- 4 slices bacon
- 2 1/2 pounds potatoes, with skins, sliced 1/4 inch thick
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 small onion, sliced
1. Render fat from bacon in large heavy skillet, preferably cast iron. Remove bacon from pan and use for another purpose.
2. Add sliced potatoes to fat in skillet; sprinkle with salt and pepper. Cover; cook 15 minutes. Uncover; turn potatoes over. Add onion. Cook, uncovered, flipping potatoes occasionally, for 15 minutes or until potatoes are cooked through and browned. Makes 6 servings.
