Heat oven to 350°F. In a small saucepan, bring 1/2 cup water, 1/3 cup applesauce, and the butter to a boil. Stir in stuffing mix, remove from heat, and cover. Let sit 5 minutes.
Slice into the side of each pork chop to create a pocket. Fill pork chops with stuffing mixture.
Heat a large skillet over medium-high heat, and spray with vegetable cooking spray. Brown both sides of pork chops.
Place remaining 1 cup applesauce in oven-proof baking dish, and arrange pork chops on top. Bake, uncovered, for 30 minutes or until cooked through. Serve with salad.
