Stuffed Pork Chops

  • 1 1/3 cups applesauce, divided
  • 1 tablespoon butter
  • 1 cup Stove Top cornbread stuffing mix (half of a 6-ounce package)
  • 6 boneless pork chops, about 1-3/4 pounds
  • 1 bag salad greens

Make It

1. Heat oven to 350 degrees F. In a small saucepan, bring 1/2 cup water, 1/3 cup applesauce, and the butter to a boil. Stir in stuffing mix, remove from heat, and cover. Let sit 5 minutes.

2. Slice into the side of each pork chop to create a pocket. Fill pork chops with stuffing mixture.

3. Heat a large skillet over medium-high heat, and spray with vegetable cooking spray. Brown both sides of pork chops.

4. Place remaining 1 cup applesauce in oven-proof baking dish, and arrange pork chops on top. Bake, uncovered, for 30 minutes or until cooked through. Serve with salad.
