Shrimp, Ham And Broccoli Jambalaya

Ingredients

  • 1 tablespoon olive oil
  • 1 cup frozen chopped onion, thawed
  • 1 clove garlic, crushed
  • 1 cup brown rice
  • 1 16 ounce can whole tomatoes, in juice, chopped
  • 1 1/2 cups chicken broth
  • 1 teaspoon ground thyme
  • 1 bay leaf
  • 2 8 ounce packages fresh broccoli flowerets
  • 1/2 pound medium shrimp, shelled and deveined
  • 1/4 pound sliced smoked ham, torn into strips

Make It

1. Heat oil in large skillet. Add onion and garlic; saute 3 to 5 minutes or until softened. Stir in rice; saute for 2 to 3 minutes.

2. Add tomatoes, broth, thyme and bay leaf to skillet. Cover; simmer for 30 minutes.

3. Stir in broccoli. Cover; simmer 10 minutes, until just tender. Add shrimp and ham; simmer, covered, 5 minutes. Remove bay leaf. Makes 4 servings.
