Seafood & Pepper Skillet

Ingredients

  • 3 strips bacon, chopped
  • 2 cloves garlic, minced
  • 1 pound small bay scallops
  • 1/4 pound fresh peeled, deveined medium shrimp
  • 1 11.8-ounce can coconut water
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 16-ounce package frozen mixed peppers, thawed
  • 2 cups instant rice

Make It

1. Cook bacon in nonstick skillet until crisp. Add garlic, scallops and shrimp; cook over medium-high heat 4 minutes. Add coconut water, water, salt and cayenne pepper. Bring to boiling. Add frozen mixed peppers; simmer 3 minutes. Stir in instant rice; cover, remove from heat. Let stand 5 minutes. Makes 6 servings.
