Sausage & Peppers

This quick and easy Italian recipe can be ready in 20 minutes. The turkey sausage and sweet peppers are served with cheesy polenta to be sure no one leaves the table hungry.

  • 3/4 pound Italian turkey sausage links
  • 3 cups low-fat milk
  • 1/2 teaspoon salt
  • 3/4 cup instant polenta
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons unsalted butter
  • 3/4 pound sliced fresh pepper strips
  • 1 can (14-1/2 ounces) no-salt added diced tomatoes
  • 1/2 teaspoon Italian seasoning

Make It

1. Coat a 10-inch saute pan with nonstick spray. Pierce sausages with a fork. Cook, turning frequently, over medium-high heat 10 minutes or until browned.

2. While sausage cooks, bring milk and salt to a boil in a medium-size saucepan. In a continuous stream, whisk polenta into boiling milk. Cook, whisking for 3 minutes. Remove from heat; stir in cheese and butter. Pour onto serving platter, spreading evenly.

3. Remove sausages to a cutting board. Add pepper strips, tomatoes and Italian seasoning to skillet. Reduce heat to medium. Slice sausages on the diagonal into bite-size pieces.

4. Return sausage to pan. Partially cover; cook 5 minutes. Pour sausage and pepper mixture over polenta and serve warm.
