1. Bring a medium-size pot of lightly salted water to boiling. Cook Ramen noodles according to package directions, omitting seasoning packets. Drain and keep warm.
2. Meanwhile, slice pork tenderloin into medallions. Heat vegetable oil in a 12-inch nonstick skillet over medium-high heat. Cook pork for to 3 to 4 minutes, or until no longer pink. Remove to a plate. Add frozen mixed stir-fry vegetables and cook 3 minutes.
3. Meanwhile, whisk together chicken broth, cornstarch, sugar, ground ginger and garlic powder. Add back to skillet along with pork. Cook 2 minutes or until thickened. Serve alongside Ramen noodles. Makes 6 servings.
