Cut tiny slits into surface of pork. Insert slivers of garlic and thyme leaves. Place pork into plastic food-storage bag. Add soy and Worcestershire. Close bag. Refrigerate to marinate pork 1 hour or overnight.
Heat oven to 400 degrees F. Remove pork from bag. Place pork on rack in roasting pan. Discard leftover marinade. Sprinkle pork with pepper. Pour 1/2 inch hot water into pan.
Roast in 400 degree F oven 1 hour or until internal temperature reaches 160 degrees F. Let rest 10 minutes before slicing. Makes 8 servings.
