Red Cabbage With Pork And Apples

Ingredients

  • 1 tablespoon oil
  • 1 onion, sliced
  • 3 boneless pork chops (about 12 ounces), sliced into 1-1/2 x 1-inch strips
  • 1 head red cabbage (2 pounds), thinly sliced
  • 2 chicken bouillon cubes
  • 1 cup water
  • 1 apple, cored, seeded and cubed
  • 1/4 tablespoon white-wine vinegar
  • 1/2 teaspoon caraway seeds
  • 1/4 tablespoon sugar
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 pounds potatoes, peeled and sliced 1/2 inch thick

Make It

1. Heat oil in large nonstick skillet over medium heat. Add onion; saute for 3 minutes. Add pork; saute 2 minutes. Add cabbage; saute 7 minutes. Add bouillon, water, apple, vinegar, caraway seeds, sugar, salt and pepper. Cover; cook for 30 minutes, stirring occasionally.

2. Meanwhile, cook potatoes in pot of simmering water until knife-tender, 12 to 15 minutes. Drain; keep warm on plate.

3. Spoon potatoes on each of 6 dinner plates, dividing evenly. Top with cabbage mixture. Makes 6 servings.
