Heat oil in large nonstick skillet over medium heat. Add onion; sauté for 3 minutes. Add pork; sauté 2 minutes. Add cabbage; sauté 7 minutes. Add bouillon, water, apple, vinegar, caraway seeds, sugar, salt and pepper. Cover; cook for 30 minutes, stirring occasionally.
Meanwhile, cook potatoes in pot of simmering water until knife-tender, 12 to 15 minutes. Drain; keep warm on plate.
Spoon potatoes on each of 6 dinner plates, dividing evenly. Top with cabbage mixture. Makes 6 servings.
