Pork with Pear Salsa

For this 20-minute recipe, pork chops are quickly sauteed in a skillet and served with a topping of fresh pear, blue cheese, and walnuts.

Pear salsa:
  • 2 pears, cored and chopped
  • 1/2 cup chopped toasted pecans
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons pear nectar
  • 1 teaspoon brown sugar
  • 1 teaspoon grated fresh ginger
Pork chops:
  • 1 teaspoon vegetable oil
  • 2 teaspoons sliced fresh ginger
  • 4 rib pork chops, 1/2-inch thick (about 1-1/2 pounds total)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup pear nectar
  • Hot cooked egg noodles, optional

Make It

Pear salsa:

1. In medium-size bowl, combine pear, pecans, cheese, pear nectar, sugar and ginger. Set aside.

Pork chops:

2. In large skillet, heat oil over medium heat. Add ginger; cook about 1 minute or until crisp. Remove with slotted spoon and discard.

3. Sprinkle chops with salt and pepper. In same skillet, cook chops 3 minutes or until browned; turn over and brown other side about 3 minutes or until instant-read thermometer inserted in centers registers 160 degrees F. Reduce heat to low; transfer chops to serving platter.

4. Add pear nectar to skillet, stirring to loosen browned bits. Simmer 3 minutes or until thickened. Pour over chops. Top with salsa. If desired, serve with noodles.
