Pork Tenderloin with Mole Sauce

  • 1 pork tenderloin (about 1 pound)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup white rice
  • Green Mole Sauce (see recipe)
  • 1 can (11 ounces) corn kernels with red and green peppers (such as Mexicorn), drained and rinsed

Make It

1. Heat oven to 425 degrees F. Season pork with the salt and pepper. Place pork on a rack in a shallow roasting pan.

2. Roast at 425 degrees F for 25 to 30 minutes or until internal temperature reads 160 degrees F on an instant-read thermometer.

3. Meanwhile, bring 2 cups water to a boil in a small saucepan. Stir in rice, reduce heat to medium-low, cover and simmer 25 minutes. While rice cooks, prepare Green Mole Sauce.

4. When rice is done, stir in corn and pepper medley; cover and cook a minute or two to heat through. Slice pork; serve with mole sauce and rice mixture.
