Heat oven to 425 degrees F. Season pork with the salt and pepper. Place pork on a rack in a shallow roasting pan.
Roast at 425 degrees F for 25 to 30 minutes or until internal temperature reads 160 degrees F on an instant-read thermometer.
Meanwhile, bring 2 cups water to a boil in a small saucepan. Stir in rice, reduce heat to medium-low, cover and simmer 25 minutes. While rice cooks, prepare Green Mole Sauce.
When rice is done, stir in corn and pepper medley; cover and cook a minute or two to heat through. Slice pork; serve with mole sauce and rice mixture.
