Penne with Arugula and Canadian Bacon

  • 3/4 pound penne pasta
  • 2 tablespoons olive oil, divided (preferably extra-virgin)
  • 6 ounces Canadian bacon, cut into small pieces
  • 3 cloves garlic, minced
  • 1 can (14-1/2 ounces) stewed tomatoes, chopped
  • 1 bunch fresh arugula leaves, rinsed and patted dry

Make It

1. Bring large pot of lightly salted water to a boil. Cook pasta according to package directions.

2. Heat 1 tablespoon oil in large skillet over medium heat. Cook bacon until lightly browned, about 5 minutes; add garlic and cook 1 minute more. Stir in tomatoes and cook until heated through.

3. Tear arugula leaves in half. Place in colander. Drain pasta over arugula (the hot pasta water will wilt the arugula). Transfer to large bowl and toss with tomato mixture and remaining oil.
