1. Combine 2 tablespoons maple syrup, brown sugar, Dijon mustard, thyme, salt and pepper. Spread over pork chops. Press 1/2 cup chopped walnuts on both sides of chops. Bake in baking pan at 400 degrees F for 25 minutes.
2. Meanwhile, melt butter in skillet. Add zucchini; cook for 10 minutes. Add 1 tablespoon syrup, reserved 1/4 cup walnuts and pinch salt and pepper. Serve with instant mashed potatoes. Makes 4 servings.
