1. Heat oven to 450 degrees F. Grease baking sheet. Divide each piece of dough in quarters. Roll each into 7-inch circle. Transfer to greased sheet.
2. Mix ricotta, pesto, salt and pepper to taste, and pepperoni. Spread each pizza with 3 tablespoons ricotta. Top with each with mozzarella.
3. Bake in 450 degree F oven 14 minutes. Makes 8 pizzas.Spinach Variation:
4. Add 10 ounces frozen chopped spinach, thawed (squeezed dry) to ricotta mixture, without pepperoni. Spread on pizzas. Top with sliced pepperoni. Bake.
